My current favorite dessert – simple, quick, and delicious

Today, just before the weekend, I wanted to share with you an absolutely irresistible cheesecake recipe. My family and dear guests love it so much that they ask for the recipe every time! Light, soft, and melt-in-your-mouth... and it's super quick to prepare – these are the recipes I love the most :)

This is a Basque cheesecake – slightly golden on top, and very soft inside. You only mix a few ingredients: a lot of cream cheese (Philadelphia), cream, a little sugar (I use less than in the original recipe – 140g instead of 240g, which is perfectly sweet), eggs, and a touch of flour. The baking is quick – the top needs to be well browned, almost "burnt"... but don't panic, that's what makes it so charming!

Once baked, the cheesecake deflates a little and becomes wonderfully creamy. You can enjoy it warm, but I find it even better after a night in the fridge – it slices perfectly and melts in your mouth.
